Carrot and Cougette Soup
I had a massive courgette that needed using up this week. The result was a fabulous fat free soup that I found online and adapted a bit to suit our tastes. Looks and tastes absolutely fabulous. A few squirts of Fry Light (or Olive/Veg/Sunflower Oil), 1 onion, finely chopped, 1lb carrots, peeled and sliced, 1lb courgette, unpeeled and sliced, 2-3 tsp curry powder, 900ml Vegetable Stock and some freshly chopped parsley to suit. Sauté onions for 5 minutes, or until softened. Add carrots and courgette, followed by the curry powder. Stir for 1-2 minutes. Add stock. Bring to a boil, then reduce heat and simmer for 20 minutes, until vegetables are tender. Add chopped parsley.
Transfer soup to a blender and blend until smooth
